HAPPY SPRING ! 🌹🌼🌺🌷

One of the best dishes from Southern USA that we have enjoyed is ‘fried Green tomatoes’. This compares to the ‘bajji’ of Southern India where we slice vegetables and dip them in a chickpea batter and deep fry. We make potatoes, plantains, onions, eggplant etc.

Southern Fried Green tomatoes are batter fried, slices of fresh green tomatoes. It is the perfect accompaniment to afternoon chai 😄

When you grow tomatoes in your garden, there can suddenly be a huge bounty of tomatoes ready to ripen. At this time, its best to consume them before ripening, a.k.a as ‘green tomatoes’.

Here is one ‘dal’ dish with green tomatoes. A totally unique dal, which is a South Indian recipe. It has ground fresh coconut added along with cooked dal and tomatoes. Channa dal is used in this recipe, since it has a nice chewy bite and does not over-cook. Fresh and juicy Green tomatoes take seconds to wilt down and become soft. This creates the perfect bite – chewy, firm channa dal, with soft sour green tomatoes. Finish off the dish with a puree of coconut ground with peppercorns and cumin to add the flavor and spice. Thats it, this dish comes together very quickly. The only time needed is for the dal to cook. Enjoy this dish with either rice or bread.

Note- if using frozen coconut, thaw it before grinding
