Balsamic Mushroom Spinach - Navajo Taco

Navajo taco is a thick bread, fried crisp and topped with delicious mix of Spinach, mushrooms and the unique flavor of Balsamic vinegar.

Ingredients

  • 3 boxes Mushrooms baby bella, oyster, white button
  • 2 tbsps Balsamic vinegar
  • 2 packed cups Baby Spinach
  • 2 tbsps Pasta Sauce
  • Salt
  • 8 Pita bread or Naan
  • Olive oil
  • Cheese crumbles

Instructions

  • Take a large skillet and saute the chopped mushrooms until caramelized
  • Next drizzle the Balsamic vinegar and de-glaze the pan completely
  • Add the baby spinach and mix to wilt
  • Add the pasta sauce and mix well 
  • Season with salt
  • Balsamic Mushroom Spinach is ready

Assembling the Navajo Taco - 

  • Drizzle some olive oil on a skillet, take a thick pita bread and crisp it up on both sides
  • Sprinkle some cheese
  • Top with the prepared balsamic mixture and spread evenly
  • Cut the crisp taco into pieces and serve
  • Navajo taco is ready!
