Squash Seeds snack

Many vegetable seeds such as butternut squash, spagetti squash, pumpkin etc. can be roasted for an easy and healthy snack While chopping the vegetable, set the seeds aside. Wash and dry them thoroughly on a paper towel. Coat with olive oil and season the seeds with your choice – keeping it very simple – salt, pepper or chilly powder. Roast in a hot oven. I usually leave such snacks on the kitchen island and my boys pickup handfuls as they walk by and before you know it, they are all gone.

Squash Seeds snack recipe

Ingredients –

  • Squash seeds – about a cup
  • Olive oil – 1 tsps
  • Salt to taste
  • Seasoning to taste – pepper powder or red chilly powder

Procedure –

  1. Separate out seeds from any remaining flesh
  2. Wash thoroughly and dry on paper towels
  3. Sprinkle salt and any seasoning of your choice, olive oil and coat well
  4. Spread evenly on a cookie sheet and roast in hot oven at 250 degrees for 10 to 15 minutes
  5. Leave outside for 10 minutes before eating
