Tandoori Mushrooms stuffed with spicy cream cheese

Presenting yet another appetizer made with just a single vegetable. Mushrooms are very meaty and comes with a good bit of protein to boot. This recipe is made with White button mushrooms to showcase the glowing color of Indian spices. This is a fabulous Fusion recipe which combines the spicy curry flavors with tangy cream cheese to provide both the zing and the cooling effect. The mushrooms will explode in your mouth and present both the ‘yin and the yang’ ☯

First a mixture of turmeric and curry powder is slathered on the mushrooms and allowed to marinate. Next they are stuffed with jalapeño cream cheese. Finally roast this in a hot oven until golden in color. Very simple yet very attractive. 

Party alert – Beware these mushrooms disappear quickly in a party ! 

Tandoori Mushrooms Recipe

Ingredients –

  • White button mushrooms 20 
  • Jalapeno flavored cream cheese (light) 1 cup 
  • Hot curry powder 1 tbsp 
  • Turmeric powder 1 tsp 
  • Salt 
  • Oil 1 tbsp 

Procedure –

  1. Remove the stalks of the mushrooms carefully, wash and tap dry completely 
  2. In a large mixing bowl, add oil, turmeric powder, curry powder and salt and combine
  3. Add the mushrooms and mix well, allow it to marinate for 30 minutes
  4. Drain out any water that has oozed out
  5. Arrange the mushrooms on a cookie sheet, stalk side facing upwards 
  6. Carefully stuff cream cheese on the mushrooms 
  7. Bake in a hot oven at 450 degrees for 10-15 minutes until mushroom are sizzling and the cream cheese is lightly turning color 

Tip – If flavored cream cheese is not available, take regular cream cheese and mix finely chopped jalapeño to make your own flavored cream cheese
