Happy New Year 2024 – our Egyptian escapade and the vegetarian delicacies

Pyramids, Temples, and Tombs ….

We embarked on an enchanting Egyptian odyssey, starting at Giza’s iconic pyramids, standing majestically against the desert backdrop. Our visits included Saqqara, where we explored the Step Pyramid, a testament to ancient architectural brilliance, and the ruins of Memphis, once the vibrant capital of Egypt, housing tales of gods and pharaohs.

We took a day trip to Alexandria which left us wanting to return soon!

Then a visit to the Suez Canal, a watery highway that connects seas and nations, a marvel of human engineering.

Our journey continued southward to Luxor. We boarded a timeless Nile cruise, gliding through history along the life-giving river, adorned with temples and villages steeped in tradition.

In Aswan, we delved into the serene beauty of the Philae Temple and the magnificent High Dam, marveling at engineering prowess. We allowed the Nile’s rhythm to soothe us as we navigated past Nubian villages, a mosaic of culture and warmth. This Egyptian voyage left us with indelible memories of a timeless land.

As part of our amazing journey, we experienced delicious Egyptian food which had a lot of cegetarian offerings.

Falafels made from Fava beans which are incredibly soft and just melt in your mouth…. Creamy fava also called ‘fool’ … Egyptian Mussaka – all of these are breakfast items.

Then comes the king of all foods – koshary – this was a delicacy that words cannot describe.

And what about all the different rice offerings?

And of course, the Dessert – Om Ali 🙂

I hope to try out all these wonderful dishes soon and post them.

Until then … wishing everyone a Very Happy New Year 2024. May we all continue to enjoy healthy and nutritious food for a long, happy and prosperous life 🎊 ENJOY!!
