Church + Union – Cacio e Pepe recipe

I have been slacking on my blog posts. There have been many reasons, but mostly laziness. Guess writer’s block…. LOL

Anyway, this post is long due, there is always a reason to write about good food and nothing is ever late when it comes to food 😉 

I took a girls trip late summer to Charleston to celebrate a beautiful friend’s milestone Birthday… the number is really that, just a number 🤫

It was truly a memorable trip where I got to meet several new folks and learnt a lot about this dear friend through the eyes of her sisters, her relatives and her closest friends. Girls trips are the best! We had an awesome time sharing the roof with several girls I was meeting for the first time. Stay happy and blessed sweet girl N……. 

One of the highlights of Charleston was our night out to the city. We strolled and hopped to several rooftop hangouts, stunningly lit-up in the summer skies. Our final dinner destination was our birthday girls choice – Church and Union. 

This restaurant is hosted in an old church – (hence the name) with the vaulted ceilings and beautiful dated decor, it brings you a feeling of nostalgia and old world thoughts. So heres how the story goes…. we had reservations months ahead and still our table was delayed. Needless to say, our party was not too happy 🤷🏻‍♀️ step-in the restaurant manager who was super sweet and immediately appeased us by taking us all to the bar and treating us to plentitude of drinks. Now that is a sure crowd pleaser for a bunch of girls…. a.k.a ladies… (who cares!) He seated us at a large table and also started us off with some appetizers on the house. Oh my… we were all floored and could not decide on what to eat. 

This is what I would say as true customer service… taking care of 10 ladies and ensuring we were completely satisfied! What started off as a rough beginning soon became a ‘praise-party’ for the manager and his effortless way to please. We will definitely remember the night at Church + Union forever!

We order several dishes and one particular dish that stood out was Cacio e’ Pepe- this is a decadent dish of pasta with loads of cheese but the star is fresh crushed peppercorns – the name e’ Pepe. Here is my attempt to replicate it. As always putting the twist to make it healthy. Vegan substitutions are also suggested. 

This pasta has to be enjoyed like a dessert… in small portions… it is that delicious and loaded! Savor it with a nice healthy salad or better yet a piping hot bowl of delicious soup…. Yet another Winter night winner! Happy Pepe ing……

Baked Feta pasta

Cacio e' Pepe – this is a decadent dish of pasta with loads of cheese but the star is fresh crushed peppercorns – the name e' Pepe
Cook Time30 minutes

Ingredients

  • 2 cups Angel Hair pasta or similar cooked al dente
  • 2 tbsps Olive Oil
  • 1 tbsp Crushed Peppercorns multi color
  • 4 pods Garlic sliced
  • 2 cups Aged, salted cheese e.g. parmesan, pecorino, romano etc.
  • 1/2 cup Milk

Instructions

  • Keep the cooked pasta in a colander
  • Start a large skillet with olive oil on very low heat, add peppercorns and garlic
  • As the flavor emanates, add the cheese and continue to stir to get an beautiful base
    Add the pasta and the milk and combine thoroughly to coat
  • "cheese and Pepper" pasta is ready!
