Lets welcome this new year with lots of hope and wishes for a Healthy year worldwide. 2020 to say the least was not one. Harry Potter fans will resonate with my kids who have given 2020 a new name “the year that must not be named ! ”. Although I must say 2020 gave folks a lot of family time, not by choice, of course !
Our family made good use of the togetherness where kids had to be ‘virtual’ all the time. They figured out ways to party online. We did small group meetups on patios with social distancing. We did biking, swimming, hiking and a lot of other outdoor activities. We all hope things return to normal or should we say a new normal in 2021. We will still have masks and social distancing.
As we embark on this new year, looking forward to posting more recipes which are easy to approach and prepare. Focusing on whole grains, fresh produce and minimally processed ingredients. Clean eating.
Lets start off with something sweet. As always here is a Biscotti recipe with whole grain flours – spelt and whole wheat. With the added goodness of flax meal. Pistachios and craisins continue the festive theme of green and red. Both packed with healthy goodness. Use craisins soaked in juices and not sugared. Don’t be alarmed by the number of steps and double baking. Tackle this on a lazy afternoon when you are really bored. You will be pleasantly surprised by the outcome and straightforward steps in this recipe. This biscotti also stays fresh for more then 2 weeks in an airtight container. So make a batch and enjoy !
Flaky biscotti, with warm cardamom flavor, melts in your mouth and yet provides a deep crunch every single bite. Dunk it into your favorite hot beverage. It is the perfect afternoon treat. Delicioso ….. :yum:
Ingredients – makes 20 biscotti
Dry ingredients –
- Whole wheat flour 1 cup
- Spelt flour 1 cup
- Flaxmeal 2 tblsps
- Baking powder 1 1/2 tsps
- Pistachios chopped coarsely 3/4 cup
- Craisins 1/4 cup
- Cardamom – finely pounded 5 pods
- Salt a pinch
Wet Ingredients –
- Butter at room temperature 1 stick
- Maple syrup 3/4 cup
Procedure –
- Combine all the dry ingredients and keep aside
- Beat the maple syrup with butter ensuring the butter breaks down into small chunks
- Add the dry ingredients to wet mixture and combine to form a dough
- Shape into a log of 3 inch width by 10 inch length, if the dough is sticky, sprinkle some flour and shape it
- Wrap the log tightly in plastic wrap and place in refrigerator for 30 minutes
- Heat an oven to 350 degrees
- Take a cookie sheet and line it with parchment paper
- Remove the log from the plastic sheet and place on cookie sheet and bake in hot oven for 40 minutes (the edges will begin to brown slightly)
- Remove from oven and cool for 30 minutes
- Place log on cutting board and slice into 1 inch thick slices, the shape of a biscotti
- Arrange the cut side flat on the cookie sheet (remove the used parchment paper) and bake at 350 degrees for 15 minutes
- Turn off the oven
- Carefully remove from oven, turn over the biscotti to other flat side and return to oven for 10 mins (remember the oven is turned off now)
- Flaky biscotti is ready !

Perfect flaky Biscotti for the afternoon snack
