Its a brownie filled with banana, dates and topped with peanut butter and walnuts. Who can resist this combination? This was a huge hit in our home and needless to say we have been indulging for days 😛 well it only lasted 2 days with our heavy consumption 🤷🏻♀️ anyway……
To remind everyone of our earlier offering – Brownies for breakfast – it is so good for you that you can eat it for breakfast. Today’s offering is a step above – it also includes bananas and peanut butter. So, double the reason to enjoy it for breakfast.
This recipe has simple, every day ingredients, can be put to bake in under 15 minutes.
When you bite into them, peanut butter will first coat your mouth along with walnut pieces. Then, slowly, you will taste the banana and date sweetness coupled with the firm texture of a typical brownie. Enjoy it warm with a scoop of vanilla ice cream to make ‘brownie al a mode’ 😉
Banana brownie bites
Ingredients
Dry Ingredients-
- 3/4 cup Whole wheat flour
- 1/2 cup Cacao powder
- 3/4 tsp Baking powder
- 1 tsp Nutmeg grated
- 1/4 tsp Salt
Wet Ingredients-
- 1/2 cup Olive oil
- 3/4 cup Dates paste
- 2 Bananas very ripe
- 2 tbsps Flaxmeal soak in warm water
- 2 tbsps Peanut butter
- 1/2 cup Walnut pieces
- 2 tbsps Almond milk optional
Instructions
- Mix the dry ingredients in a mixing bowl, set aside
- Take another mixing bowl and mash the bananas coarsely, add date paste, olive oil and flax meal paste; mix well
- Now add the dry ingredients to this mixture and combine well If it seems thick, add the almond milk to loosen a bit
- Layer a brownie pan with parchment paper and pour the batter and spread evenly
- Sprinkle the peanut butter all over; sprinkle broken walnuts all over
- Bake at 350 degrees in a preheated oven for 25-30 minutes. Check for doneness by inserting a fork at the middle part of the tray. The fork should come out clean
- Turn off the oven and leave it in for another 5 minutes to crisp up
- Remove and let it cool for 10 minutes
- Cut into 1-2 inch squares
