Here is a neat and easy 5-minute upma recipe using Pad Thai Rice noodles. Upma is a classic South India tiffin (a light mid-morning or tea time meal) which is a standard go-to meal when you have nothing planned. Seasoned with lentils, upma is nothing but steam-cooked grains typically made with semolina or rava. How about making upma with a packet of Pad Thai noodles? It took all of 5 minutes in the InstantPot and came out amazingly good. I added 1 small potato, carrot sticks and green peas. Sprinkle a dash of curry powder and you have a full-blown meal instantly. Try it out and you will be pleasantly surprised with the results.
Note – there may be some clumps of noodles which adds to the beauty of this dish!
Rice noodles upma in Instant Pot

Ingredients
- 1 tbsp Sesame oil
- 1 tsp Mustard seeds
- 1 tsp Urad dal
- 1 tsp Channa dal
- 2 Red Chillies dried
- 2 cups Pad Thai noodles dry, broken
- 1 cup mixed vegetables Potato, Carrots, peas – diced
- 1 tsp Curry powder
- Salt
Instructions
- Start the InstantPot on SAUTE mode
- Add the oil and mustard seed and let it pop
- Add the urad dal, channa dal and red chillies and fry for 2 minutes
- Add the noodles and roast lightly in the oil
- Add 1 cup of water, add curry powder and salt and mix well
- Set to cook for 5 minute under pressure
- Once timer is done, let it sit for 5 minutes
- Release pressure carefully and mix light to combine, let sit for a few minutes before serving
